Vegetarian fare is not a new thing, nor is it considered an oddity as it once was. People are often surprised at how satisfying a meal can be even if it does not include the typical serving of meat or fish or poultry. It is healthier as a way of life than being a heavy meat eater for a variety of reasons, the most obvious being that by consuming large quantities of fruits and vegetables the body automatically is receiving large quantities of roughage, and, as any colon cancer patient will tell you, a diet high in roughage is strongly encouraged as being a tremendous help in avoiding ailments of the intestines.
