Mexican Street Corn

Mexican Street Corn Mexican Street Corn

If you live in Los Angeles, especially in the valley then you are likely to see corn on the cob at the park, in the neighborhood and on the street.  You will see crema Mexicana slathered on the corn as the finishing touch before you bite into it. 

 

Ingredients

  • 2 ears fresh corn
  • 2 tbsp. crema Mexicana
  • 1 tbsp. cotija cheese
  • Cayenne pepper
  • 1 lime

Instructions

Remove husks and place ears of corn on hot grill.
Turn slowly and cook until light brown marks appear on corn.
Cook until mostly charred for truly authentic corn.
Remove from grill.
Slather each ear of corn with crema Mexicana.
Then slather with grated cotija cheese.
Add cayenne pepper to taste.
Squeeze juice of ½ lime over corn. Note: This is the most important ingredient!
