Festive Red Potato Salad

My grandfather would have never known his grand-daughter would grow up to be a Food Magazine editor.  It seemed like I turned my nose up to everything.  No one sensed that I might have discriminating taste.  Among the things I did not enjoy growing up was potato salad.  It pops up at every family reunion and cook out.  However, over the years I have figured out a few things to put a twist on the potato salad that I grew up avoiding beginning with red potatoes instead of brown. 

1 1b of Red Potatoes

2bn of scallions

1 half of a Green pepper diced

2 hard boiled eggs

½ of (my recipe would use Miracle Whip) Mayo

½ tablespoon of Dijon mustard

1 tablespoon of Celery seed

½ teaspoon of white pepper

½ table spoon of seasoning salt

 Put unpeeled freshly boiled and diced potatoes in bowl.  Add seasonings, scallions, peppers, celery seed, Dijon mustard and eggs.  Finish by adding mayo and then stir.  I prefer my salad warm but most American and German potato salads are served cold.

*Use pepper grinder to add pepper to taste, fresh cooked bacon bits and chives can add more flavor to this dish.
