The black cake, derived from the English Plum Pudding, is a type of fruit cake which is generally served at Guyanese weddings (Christmastime celebrations too). Black Cake is made with rum, sugar, plums, raisins, brown sugar, and a bittersweet caramel sauce called “browning.”
The Guyanese tradition entails that the bride and groom eat Black Cake directly after the marriage ceremony. The cake may also be served to wedding guests.
