On Christmas Eve, I stumbled upon a listing of recipes which help to comprise an Italian Christmas Eve Dinner.  Among the traditional dishes served is fried eel.  Visit mangiabenepasta.com for a complete menu of recipes for Christmas Eve.  Here is the fried eel recipe

 

  • 1 cup flour
  • 1 teaspoon salt
  • 2 pounds eel, skinned and cut into 2-inch pieces
  • Vegetable oil for deep frying
  • Lemon wedges 

Mix the flour and salt together on a plate. Coat the eel pieces in the flour and shake off excess.  Heat the oil to 375 degrees F. in a deep fryer.
Fry the eel until golden brown. Remove to paper to drain.
Serve with lemon wedges.
