I created The Blue Razz Sundae and The Razzy Fruit Salad to accommodate hectic lifestyles without sacrificing deliciousness, healthiness or visual appeal. Children, parents, family members and friends of all ages will enjoy these delectable treats. They’re low in sugar, carbs and calories but high in taste, vitamins and antioxidants.
The Razzy Fruit Salad serves 4
4 cups cantaloupe, peeled and cubed
1 cup fresh blueberries, washed and drained
1 cup fresh raspberries, washed and drained
2 large bananas
½ cup sliced almonds
Razzy Raspberry Sauce (see recipe above)
In a large bowl, combine the cantaloupe and berries. Refrigerate. When ready to serve, add sliced bananas and almonds to cantaloupe and berry mixture.
Razzy Raspberry Sauce
1 10-ounce jar Raspberry Fruit Spread2 tablespoons water¼ teaspoon orange zestPlace all ingredients in microwaveable bowl and stir. Microwave on high power for 40 to 60 seconds. Stir until smooth. Serve immediately. Any remaining sauce can be transferred to a glass jar (refrigerate, tightly covered). When ready to use, just reheat sauce. Thin the sauce with 1 tablespoon of water if necessary.
Drizzle with the raspberry sauce. Serve.
Additional Information: I wait to add the bananas and nuts until immediately before serving to prevent the bananas from browning and to keep the nuts crisp. You can also squeeze lemon juice on the bananas and that will slow the browning process.
Health Tip: Fruits are an integral part of a well-balanced diet, but unfortunately many Americans aren’t eating the recommended servings of fruits each day. Not only do these recipes fulfill part of the daily food requirements based on the United States Department of Agriculture (USDA) Food Guide Pyramid (www.mypyramid.gov), but both children and adults alike will love these taste sensations. -
