What is Cardamom

Cardamom, also known as Amomum or Aframomum, is part of the ginger family. It is a very popular spice in Indian, Northern and Central African, Scandinavian and Middle Eastern cuisine. It is native to India, Sri Lanka, and is cultivated in Guatemala, Mexico, Indonesia and certain areas in Southern Asia. Much like ginger, cardamom is extremely aromatic and it adds a sweet, rich taste to whatever is being prepared. Caradamom, in ground form, is often mixed with other spices because it's very expensive in pod form. When cardamom is bought already grounded, much of the flavor and aroma dissipates because the oil has been released.

Fresh cardamom can be found in green brown or black pods. Some cardamom pods have been bleached white; however, the aromatic quality diminishes with bleaching.  Grinding cardamom yourself will achieve a greater level of freshness and this can be accomplished with pestle and mortar. Store pods in an airtight container for the ultimate in freshness.

Cooking with Cardamom

Cardamom can be used in curry dishes, biryani, quorma, soups, stews, rice dishes, fruit salads, breads, and pastries. Ethiopians use cardamom in their tea and many Arabs put cardamom and cream in their coffee as a sign of hospitality.

Medicinal uses for Cardamom

Medicinal uses for cardamom include relieving indigestion, treating infections in teeth and gums, much like cloves are used.  It also has anti-septic action to combat bad breath. In India, cardomom is also used for chest disorders such as asthma and bronchitis.  The spice is also utilized for throat problems and inflammation of the eyes.
