With the help of his brother and co-host Michael Rubino, the two helped to promote Canadian wine over the evening. Wines from the Niagra region were paired with each course.

A chardonnay was paired with the Sashimi, a merlot paired with lamb and the pride of Canada, the ice wine paired with dessert. The $75 a bottle Ice wine was paired with Chocolate mousse and Vanilla Gelato complimented with a pear puree and miniature globe shaped pears. Chef Rubino's was born in Toronto to Italian parents. His cooking style is Japanese fusion.
