I recommend renting a tent for this event for your guest to eat dinner in because this is a sentimental gathering. I would decorate the tables with cotton flag table cloths, red white and blue roses in a royal blue crystal vase with lit tea candles floating in the middle will make the event even more intimate. Patriotic dishware would grace the tables. I would also use a projector to do a slide show of the great memories of the soldiers that we hold close to us and the soldiers that we lost. This will bring the cookout to a great ending.

Island Chicken
4 (6ounce) boneless, skinless chicken breast.
- 2 Teaspoons extra virgin olive oil
- 2 ¼ teaspoons salt free Jamaican jerk seasoning, divided (recommended the spice hunter salt)
- 1 (20ounce) can of no sugar added pineapple slices, in juice reserved (recommended Dole)

- 4 Bell peppers (red or yellow) stemmed and quartered

Fourth Of July Cocktail
- 1 Ounce watermelon Schnapps
- 1 Big splash cranberry juice
- 1 Very thin slice jalapeno or Serrano pepper
- 1 Slice lemon
- 1 Slice lime
- 1 ½ ounce tequila
- ¼ Ounce tequila
- ½ Ounce blue curacao
- ½ Ounce simple syrup
- Watermelon wedge, for garnish optional

Patriotic Blue Razz Sundae
Serves Four
- 2 cups fresh blueberries
- 1 cup fresh raspberries
- 1 quart low-fat pineapple-coconut (or vanilla) ice cream
- Razzy Raspberry Sauce (recipe follows)
- 4 Chocolate Wafers
Wash and drain berries. Set aside. Place a few blueberries into the bottom of 4 martini glasses. Place 2 scoops of ice cream in each glass. Place more blueberries around the ice cream scoops.
