Ingredients for Chilleno Casserole
- (2) 7oz cans of chiles or
- 1/2 pound of shredded jack cheese
- 1/2 pound of shredded cheddar cheese
- 4 eggs(separated) need both the wites and the yolks
- 2/3 can of evaporated milk
- 1 tbsp of flour
- 1 tsp of salt
Directions- In a large 9x13 oven safe pan or pyrex, put 1 layer of chiles, then 1 layer of cheese. Repeat until all chiles and cheese are use. Beat egg white until stiff. beat yoks separately until foamy. Beat milk, flour and salt in the egg yolks. Fold the egg whites into the yolk mixture. Pour the mixture on top of the cheese and chiles evenly. Preheat oven to 350, then bake for 50 minutes.
Tip: Serve with salsa.
Note you can also steam fresh chile: Roast, steam in bag and peel chiles. Slit the chiles lengthwise and remove seeds and veins, leaving the stem intact.
